Ingredients:
4 potatoes
2 Tbsp olive oil
1 stick of butter
½ cup sour cream (see our sour cream recipe)
½ cup of cheddar shredded cheese
½ cup of milk
1 to 2 Tsp of Apocalypse Scorpion
2 Green Onions
1 Tsp salt (we prefer sea salt)
1 Tsp Black Pepper
½ cup bacon bits and Ranch Packet
Instructions:
Preheat oven to 400 degrees
Place potatoes on baking sheet
Rub them with the oil and roll them in the salt
Bake for 1 hour
(While that is baking)
Cut up your butter into chunks in a large bowl and add your sour cream and bacon bits
Remove potatoes and lower tempo to 350 degrees
Cut each potato with a sharp knife from one end to the other on the top
Scrape out inside of potatoes and add into sour cream bowl
(Let the potato keep the potato shape. You do not have to scrape all out if your worried about messing up)
Grab the sour cream bowl with the potato, butter, bacon, and sour cream. Add cheese, milk, Apocalypse Scorpion, pepper, green onion, ranch packet and mix.
Fill potato shell with filling. Top with your favorite cheese and chives (we used cheddar shredded cheese)
Bake 15 minutes longer if needed to melt cheese toppings and serve
